Iddiyappam
&
Vegetable Stew
   
Idiyappam is another type of Appam. Idiyappam is usually served with coconut milk( sweetened) or vegetable stew. It is another delicacy which is made with rice flour. We make it with the help of an 'idiyappam maker' a vessel, which gives it, it's special appearance. Though this dish is usually made only in kerala the maker is avilable all over India and is being used to make many other delicacies.
 
IDDIYAPPAM


Ingredients:

  • Rice : 1 kg.
  • Hot water: 300 ml
  • Sugar : 3 tsp Salt: to taste

Method:

Soak the rice and strain.
Make a smooth paste and cook the rice powder till golden color.
Strain the rice powder with the help of a strainer - powder should be smooth. Add the hot water and mix it well. Make a smooth dough.
Fill the iddiyapam maker with the above dough .rotate the handle of iddiuyappam maker in clock wise direction smoothly and close the maker tightly.
Grease a steel plate and onto it press the handle of the iddiyappam maker and rotate the maker in the clock-wise direction and then
We will have the noodles coming out of the maker . Make two or three circular rounds of the noodle with the maker. Fill water in a steamer .
When the water comes to a boil. Put the iddiyappam plate into the steamer and allow it to cook.
Serve it hot along with sweetened coconut milk or vegetable stew.



VEGETABLE STEW

Ingredients:
  • Coconut oil : 75gms.
  • Potatoes : 100gms.
  • Carrots : 75gms.
  • Cauliflower : 100gms.
  • Peas :100 gms .
  • Beans :75gms.
  • Onion : 100gms.
  • Salt : to taste.
  • Ginger (julienned) : 20 gm.
  • Curry leaves : 1 sprig.
  • Green chillies(slit): 10 nos.
  • Garam masala (cinnamon, cloves,cardamom) :2 gm.
  • Coconut milk I extraction.: 1 cup
  • Coconut milk II extraction : 3 cups.

Method:

Cut the vegetables (potatoes, cauliflower, carrot, beans) into 1.5 cm inches.
Heat the oil saute slice onions, ginger, green cillies, whole garam masala ,and the curry leaves , onion should not brown.
Check the seasoning and pour the IInd extract of the coconut milk and on slow fire cook the vegetables.
Then once they are cooked add in the Ist extract of the coconut milk,
Check for the seasoning.
Sprinkle the stew with a little garam masala powder and garnish with some fried curry leaves and onion.
Serve it hot with iddiyappam.
